Barley is a very diabetic friendly food with a low glycemic index.
2 Teaspoons Minced Garlic $0.02 (jar purchased at the Dollar Store)
½ Teaspoon Dried Thyme, $0.03 (bottle purchased at the Dollar Store)
8 oz. button mushrooms, sliced $1.25
1 cup pearled barley $1.07
2 cups vegetable broth, $0.26
Preheat oven to 350F. Add the minced garlic and butter to the
bottom of your Dutch Oven (or frying pan). Cook over medium heat for 1-2
minutes. Add mushrooms and cook until they are light brown.
Add barley, vegetable broth and thyme to Dutch Oven and cover
with lid. (or transfer everything to oven-safe casserole dish). Bake for 1 hour.
Fluff barley with a fork prior to serving.
