Russet potatoes are a great source for Vitamin B-6 and Vitamin C. They are also excellent for Potassium.

limits. They should be eaten in moderation and not paired with other
sugary or high glycemic foods. Also, topping the baked potato with foods that have a lower glycemic index will lessen the impact of the potato on blood sugar.
There are a probably a thousand things that you can do with a russet
potato, but the easiest way to prepare them has to be the simple baked potato.
