Anything involving Mandarin Oranges is always a hit with The Peanuts, so that is the plan for the day. Recently I have been focusing on using ingredients that I already have and I have everything that I need for this recipe - perfect!
2 lbs Chicken breasts
1 can of Pineapple, drained
1 can of Mandarin Oranges, drained
1/3 cup of Corn Starch
1/3 cup of Brown Sugar
1/3 cup of Lemon Juice
1 T Tamari Sauce (soy sauce is great with this, but I needed something gluten-free)
1/2 t Ginger
Salt/Pepper (to taste)
Place chicken in slow cooker
Stir to combine the rest of the ingredients. Pour over chicken.
Cook on High for 4 hours.
Serve over rice and top with almonds
