I threw this together last night from simple things that I had in the house and we all loved them. As my son said: "I don't care that they are healthy, I am going to eat anyway. They taste like French Fries". He then ate the whole plate and I had to make more. The best part was that he wanted to help me cook the next batch. "I'll skip some of my tablet time tonight. I'd rather stay in here with you and cook". (very happy momma - on so many levels!!)
2 cups Hash Brown Potatoes (cubed, frozen)
2 T Olive oil
2 T Parmesan Cheese, grated
Salt/Pepper (to taste)
1/2 t Oregano
1 t Chives
Heat olive oil in pan on med/high heat.
Carefully pour potatoes into pan and stir to evenly cover with olive oil. Arrange in single layer.
Cook undisturbed for approximately 6-7 minutes. Stir and redistribute into a single layer. Continue cooking/stirring until potatoes have the desired color and crispness.
Grate Parmesan cheese over the potatoes. Sprinkle on salt/pepper and oregano on the potatoes. Stir to combine.
Remove from heat. Top with chives and serve.
