I'm not sure what I love the most about this recipe - how delicious it is or how inexpensive and easy it is to make

I crushed up the cereal and mixed it in with the parmesan cheese. It didn't get the "toasted" color that bread crumbs get, but it provided that very important crunch. It is also MUCH cheaper than gluten free bread crumbs! It was a yummy substitute and I will use it again.
2-3 T Salsa
1-2 T Parmesan Cheese, Grated
1-2 T Chex Cereal, crushed
Preheat oven to 450F
Cut open avocado and remove pit. Top both halves with salsa. Top with parmesan cheese and Chex.
Roast at 450F for 5-7 minutes.
