I made this version with carrots and peas, but it is also an easy way to use up whatever leftovers that you have in the refrigerator.

Carrots, Edamame and Ranch Seasoning
Place the bag of rice and water in microwave safe bowl. Add chopped carrots and flavoring (garlic, tamari sauce, etc.) Cook according to the package directions. (This brand was for 10 minutes) Add the frozen peas during the last 3-4 minutes of cooking, so they don't get mushy.
Drain rice and vegetables. Add rice back to the bowl and fluff with fork. Add vegetables and stir to combine. Top with parmesan cheese.
