As much as I love the leftover sandwiches, even I don't want to eat the same thing every day.
Here are some of my favorite leftover recipes that add some variety:

2) Potato Croquettes
I love potato latkes and these have a very similar flavor - without having to shred all of the potatoes!
3) Turkey Bolognese Sauce
This recipe is a great way to use up your leftover dark meat. It also freezes really well.
4) Turkey Croquettes
I especially love this recipe because it uses leftover turkey and mashed potatoes.
5) Turkey Cranberry Pinwheels
These are a yummy bite-size snack. My son, who doesn't like cranberry sauce, even likes these. We use cheddar cheese instead of the Monterey Jack that is mentioned in the recipe
6) Turkey Tetrazzini
This is a very different flavor profile from the rest of the Thanksgiving leftovers, so this is a nice way to mix things up. This recipe calls for Madeira, but I just use whatever leftover white wine we have on hand.
